Dr Oz: Mac And Cheese Recipe
Ingredients:
1 package whole wheat orecchiette
1 stick butter
1/2 cup thinly sliced shallots
2 garlic cloves, minced
5 cups rice milk
1/2 lb low-fat cheddar cheese, shredded
1/4 lb parmesan, freshly grated
1/4 lb gruyere, shredded
1/4 lb light crème fraiche
1 tsp ground nutmeg
1 tsp yellow mustard powder
2 1/2 tbps all-purpose flour
1/2 cup panko
1/2 cup toasted bread crumbs
1/2 cup parsley, washed and dried
1/4 cup basil leaves, washed and dried
1/4 cup freshly grated parmesan
1/2 tsp salt
1/2 tsp freshly ground white pepper
2 cups cooked collard greens

1. Preheat your oven to 375 degrees.
2. Boil water and cook the pasta according to the directions on the box.
3. In a pot, melt the butter and cook the shallots until they start to carmelize.
4. Add the flour to make a nice roux.
5. Next, add the rice milk and garlic to the pot and keep stirring to make sure no lumps form.
6. Bring the pot to a boil and then lower the heat..
7. Add the cheese and creme fraiche (though I do not recall him adding creme fraiche on the Dr Oz Show!).
8. Continue mixing the sauce so that all of the cheese melts and the sauce is not lumpy.
9. Add in the salt, pepper, mustard powder and nutmeg.
10. Mix the sauce with the collard greens and cooked pasta.
11. Pour the mixture into a baking pan.
12. Blend together in a food processor a bread crumb herb mixture made out of the panko bread crumbs, basil, parsley, parmesan cheese, salt and pepper.
13. Top the pasta in the pan with the breadcrumb and herb mixture.
14. Broil the Macaroni and Cheese for 5-9 minutes so that the top gets a light golden color.
