Kitchen Diva Power Bar Recipe
Ingredients:
Butter-flavored cooking spray
1 cup quick-cooking rolled oats
1/2 cup raw unsalted sunflower seeds
1/2 cup toasted wheat germ
1/4 cup whole wheat pastry flour
1/2 cup dried apricots
1/2 cup raisins
1/2 cup raw almonds
1 small, ripe banana
1 cup non-fat vanilla yogurt or 8 oz of soft, silken tofu
1/2 tsp ground cinnamon
1/2 tsp nutmeg
1/3 cup pure maple syrup or agave syrup
1 tsp vanilla
2 large eggs

Directions:
1. Preheat your oven to 350 degrees.
2. Spray a cookie sheet or 9×13 baking dish with nonstick spray, or line with a nonstick lining such as parchment paper.
3. Put all of the dry ingredients (wheat germ, flour, sunflower seeds, oats, almonds, raisins and apricots into a food processor. Pulse until it is coarse, but not a complete powder because you want some texture for chewiness.
4. Now add the wet ingredients (soft tofu or yogurt, banana, agave nectar, eggs, vanilla, cinnamon and nutmeg). Pulse again until the mixture comes together.
5. Place the sticky mixture onto your well greased cookie tray or baking dish and distribute evenly.
6. Bake 15-18 minutes.
7. Let them cool down for 5 minutes so that they get firm and easier to cut.
8. Individually wrap all 20 Power Bars in a resealable ziploc bag.
