Dr Oz: Rachael Ray Chicken Thigh & White Bean Salad Recipe. Dr Oz would a segment along with Rachael Ray where the lady taught everyone learning to make delicious, healthy, and budget-friendly recipes. One of the dinners was Rachael Ray’s Grilled Fowl Thighs with Peppermint White Beans along with Tomato Onion Salad. A wonderful tip from this menu is that you can stretch your protein in a food by using beans, which can be inexpensive compared to hen. Plus, by using chicken thighs, you will save a large amount of money over hen breasts. However, I know only like to consume chicken breasts, therefore i would make that replacement in my kitchen.

Dr Oz: Rachael Ray’s Grilled Chicken Thighs & Warm White Bean Salad

Ingredients:

8 boneless, skinless chicken thighs

Salt and pepper

4 tbsp extra virgin olive oil, divided

2 cloves garlic, grated or finely diced

1 sprig fresh rosemary, finely chopped

1 red Fresno chili pepper, seeded and finely chopped

2 (15 oz) cans white beans, rinsed and drained

2 lemons, 1 juiced and 1 cut into wedges

4 red plum tomatoes, cored and cut in half the long way and into 1/4-inch slices

1 small red onion, thinly sliced

A handful of flat leaf parsley, rough chopped

10 fresh basil leaves, torn or rough chopped

Dr Oz: Rachael Ray White Bean Salad & Chicken Thigh Recipe

Directions:

1. Heat your grill over medium-high heat.

2. Sprinkle salt, pepper and 2 TB of extra virgin olive oil on top of your chicken thighs.

3. Grill the chicken for 4-5 minutes per side or until they are cooked all the way through. Then let them sit for a few minutes.

4. Meanwhile, in a pan over medium heat, warm up a TB of extra virgin olive oil.

5. Add rosemary, garlic and Fresno chili pepper to the oil and cook for a minute or two.

6. Add the beans to the pan and stir well.

7. Season with salt and pepper to your taste.

8. Remove the pan from the heat and mix in the fresh lemon juice.

9. In a separate bowl, mix together the red onion, tomato slices and sprinkle with basil, parsley, salt, pepper and extra virgin olive oil.

10. Serve the warm bean salad, the chicken thighs and the tomato onion salad as a Budget Dinner that is great for weight loss and diets!
