7. Cut the Turkey Sausage into slices and cook them with the peppers and onions.
8. Add a can of crushed tomatoes to your pan along with red pepper flakes and Italian Seasoning.
9. Simmer over low heat for 20 minutes.

Ingredients:
1 large eggplant
4 cups whole wheat bread crumbs
1/2 cup whole wheat flower
2 cups egg substitute
1 (32 oz) container of low-fat ricotta cheese
1 (8 oz) package of low-fat mozzarella cheese
4 tbsp of grated cheese
1 (32 oz) container of your favorite prepared tomato sauce
3 tbsp Italian seasoning
Salt and pepper to taste

Directions:
1. Peel the eggplant and cut it into 1/8 inch slices.
2. Put the whole wheat flour into one bowl, the egg substitute into another bowl, and the whole wheat breadcrumbs into yet another bowl. These will be your dipping stations.
3. Into your breadcrumbs bowl, add the pepper, salt and 2 TB of grated cheese like Parmesan.
4. Add a bit of salt and pepper to the bowl of flour too.
5. Dip each slice of eggplant into the flour bowl first, then into the egg bowl, and finally into the bread crumb mixture.
6. Place each piece of breaded eggplant onto a baking sheet that has been sprayed with a non-stick spray.
7. Cook the eggplant rounds for 10 minutes in a 350 degree oven.
8. Flip the eggplant over and cook the other side until it is golden brown.
9. Mix together the ricotta cheese, 2 TB of grated cheese like Parmesan, half of the mozzarella, and half of the tomato sauce.
10. Place around 2 TB of the cheese mixture into each piece of cooked eggplant and roll it up.
11. Put some tomato sauce into the bottom of a 9×13 baking dish and start adding the eggplant rollatini’s into the dish.
12. Top the dish with the rest of the tomato sauce and the leftover grated cheese.
13. Cook in a 350 degree oven until the cheese melts.
14. Serve with steamed vegetables or a salad.

1 very ripe banana

1. Place all of the ingredients into your favorite blender and blend until smooth.
2. You can also use frozen fruit to make the smoothie thicker and colder, or you can add ice to do the same trick.

2. Mix the beans with the vinegar, agave nectar, olive oil, pepper and salt. It might work better to first mix these ingredients together in a small bowl to make the dressing before pouring it over the bean and vegetable mixture.
3. Sprinkle the salad with chopped cilantro.

1. Put all of the ingredients into a food processor and process until smooth.
2. Serve the Spinach Dip with either pita chips or vegetables (the healthy choice!).
Even though the above is exactly what Dr Oz said to do, I would add the chopped spinach after processing together the rest of the ingredients. But that is a matter of preference, and I do tend to love spinach, so perhaps that is why!

5. Serve the Salmon Salad in a pita with lettuce and tomato or on whole wheat crackers.

- 1 Banana per person (the more ripe it is, the sweeter your ice cream will be)
- 1/2 tsp Vanilla

1. Remove the peels from the bananas and slice them up.
2. Put the banana slices onto a baking sheet and place it in your freezer.
3. Once the bananas are frozen all the way through, take them out to thaw slightly.
4. Put the frozen bananas into a strong blender (or even a food processor should work), along with 1/2 tsp of vanilla.
5. Sprinkle the top of the Banana Ice Cream with nutmeg, cinnamon or berries.
Your imagination is the limit with this healthy ice cream recipe. You can try the same thing with different fruits like berries 0r mangoes. If you like strawberry banana smoothies, try mixing frozen strawberries and frozen bananas to make an ice cream. Or if you like peanut butter, try mixing some peanut butter into the banana ice cream. Non-stick cooking spray
3 eggs
1 tbsp milk
2 tsp cinnamon
Dash of vanilla extract, optional
Dash of fresh nutmeg, optional
6 slices whole grain sandwich bread
1 pint fresh berries (strawberries, blueberries, blackberries or raspberries)
1 cup Greek yogurt, regular or low-fat
Maple syrup or honey, for drizzling

Directions:
1. Preheat your oven to 375 degrees F.
2. Spray nonstick cooking spray inside of a muffin tin tray.
3. Mix together the eggs, cinnamon, milk, vanilla and nutmeg in a bowl.
4. Cut a diagonal slit into each slice of bread so that you can fold it into a cup shape to go inside of your muffin tin.
5. Dip your bread into your bowl of eggs and press the bread into the shape of a cup in the muffin tin.
6. Bake the French Toast Cups for 12-14 minutes or until they are light brown and cooked through.
7. Let the French Toast Cups cool a few minutes and then take them out of the muffin tray.

Ingredients:
1 lb whole-wheat or whole-grain spaghetti
1/4 cup extra virgin olive oil) plus some for drizzling
6-8 anchovy fillets, drained
4 large garlic cloves, grated or finely chopped
2 tsp Worcestershire sauce
1 bunch of cavolo nero kale, stemmed and shredded
Lots of coarse black pepper
1/4 tsp freshly grated nutmeg, to taste
1 lemon
2 large egg yolks
1 1/2 cups grated Pecorino Romano cheese
Dr Oz: Rachael Ray Caesar Pasta Recipe
Directions:
1. Boil your pasta according to the directions on the box. You want a nice al dente pasta.
2. Drain the pasta but keep an extra cup of the starchy cooking liquid to temper the eggs later on.
3. Meanwhile, over medium-high heat, warm up a pan with olive oil (or EVOO like Rachel Ray likes to say!).
4. Add the anchovies to the pan and cook until they melt into the oil, which takes a couple of minutes. After this happens, the anchovies will not have a “fishy” taste.
5. Reduce the heat to medium-low and add garlic into the pan.
6. Cook for a minute and then mix in the Worcestershire sauce.
7. Wilt the kale into the pan and add some nutmeg, lots of pepper and the fresh lemon juice.
8. Beat the egg yolks in a separate bowl with a fork and add the warm starchy pasta water to help temper the egg yolks.
9. Turn the heat off and mix the pasta into the pan.
10. Toss in the eggs and half of the pecorino romano cheese into the pan for a minute.
11. Serve with olive oil drizzled on top and with a sprinkling of the cheese.
